Holiday Recipe #2
I thought I would give you another delightful holiday recipe today, it being so close to Christmas and all!
These are so yummy, they are difficult to stop eating. But there is not a single bad ingredient in there, just healthy, happy stuff!
0,5-0,75 dl dried goji berries
1 dl almonds
8 large pitted dates
2 tablespoons cocoa (a dark version, none of that mix-with-milk-to-drink-stuff!)
1 tablespoon extra virgin coconut oil
3/4 dl shredded coconut
1. Cover the goji berries with water and leave them to soak for about 20 minutes
2. Put all ingredients in a blender, apart from the shredded coconut
3. Form the paste into bitesized pieces and roll them in the coconut.
Goji berries contain a lot of good stuff that your body needs, and that are especially important now during the pre-Christmas stress. Some of these include: calcium, potassium, iron, zinc, selenium, vitamin B12, vitamin C and beta-carotene.
The dates are admittedly a rather sugar-filled fruit, but it is good, natural sugar. And, in comparison to refined white sugar, dates contain other healthy things as well, both vitamins and minerals.
